Dealing with cravings…Part 1 (of many!)

I was totally craving Greek food tonight, but given my commitment to my health and fitness, I knew I couldn’t just go get takeout. I decided to do Greek my way!  I was pleasantly surprised by the results!  Here is what I did:

Greek Chicken Kebabs

1 lb. boneless, skinless chicken breasts cut into 6-8 chunks each

juice of 1 lemon

1 tsp. olive oil

2 cloves garlic chopped

1/2 tsp. oregano

1/2 tsp. salt

1/4 tsp. pepper

Place chicken chunks and marinade into a ziploc bag. Marinate for at least 30 minutes but no more than an hour.  Thread onto skewers and grill over medium-high heat until chicken is cooked through.

Tzatziki Sauce

1 container fat free plain Greek yogurt

1 8 oz. container fat free sour cream

1 tsp. chopped dill

1 large cucumber, peeled, seeded and chopped (or 2 mini cucumbers just peeled and chopped)

3 cloves garlic, minced

1 tbsp. fresh dill, chopped

juice of 1/2 lemon

Put all ingredients into food processor and pulse until well blended. Refrigerate for at least an hour to allow flavors to blend. (NOTE – HOLY GARLIC, BATMAN!! If you’re not big on garlic, you can cut back a bit!)

Chopped Greek Salad

3 bell peppers (1 red, 1 orange, 1 yellow) cut into large chunks

1 large cucumber, chopped (or 2-3 mini cucumbers, chopped)

1 pint grape tomatoes, halved

4 oz. reduced fat feta cheese, cubed

8-10 kalamata olives, pitted and chopped

1/4 cup lowfat vinaigrette (use your favorite bottled or even better – homemade!)

Combine all ingredients and let sit for at least an hour.

Serve with whole wheat pita. YUM!!
